Canapes "Vinaigrette"
Ingredients:
- boiled vegetables (2 pieces each - carrots, beets, potatoes);
- pickled cucumber (2 pcs.);
- canned beans (100g);
- horseradish (50 gr.);
- mayonnaise (200 gr.);
- rye bread (3 pieces).
Preparation:
Peel the boiled vegetables and cut into thin slices. Using cookie cutters you can cut out identical shapes from them. Cut the bread in the same way as vegetables. Stir mayonnaise with horseradish. Coat each vegetable slice with mayonnaise sauce and place on top of each other, securing them with a skewer. Do not coat the top slice, but secure a piece of bread at the bottom. Vegetable canape with cherry tomatoes and cucumber
Ingredients:
- Russian cheese (200g);
- olives (10 pcs.);
- fresh cucumber (1 pc.);
- lettuce leaves;
- cherry tomatoes (5 pcs.).
Preparation:
Cut the cherry tomatoes in half, and cut the cucumber and cheese into small cubes. Use a plastic skewer to collect the ingredients in the following order: olive + half a cherry + cucumber + cheese. Garnish the dish with lettuce leaves and place the appetizer on top. Can be served.
Canapes “Spring”
Ingredients:
- pickled champignons (6 pcs.);
- baguette or loaf (6 pieces);
- tomato (1 pc.);
- carrots (1 pc.);
- processed soft cheese (2 tablespoons);
- bell pepper (1 pc.);
- capers (50 gr.);
- dill;
- chili seasoning, salt and pepper to taste.
Preparation:
Using a sharp knife, chop the bell pepper and tomato into small pieces. The carrots must be grated on a fine grater. Add chopped vegetables to the processed cheese, salt, pepper and season with chili. Mix thoroughly until smooth. Remove the crusts from the baguette. Spread the resulting mixture on top and divide the pieces of loaf in half. Place mushroom caps and caper slices on top of the mixture. You can make several parallel shallow cuts on the champignons, this is more effective. Decorate the dish with dill feathers.
Pepper rolls with eggplant
Ingredients:
- eggplant (small);
- capers (1 tablespoon);
- bell pepper (2 pcs. red and 2 pcs. yellow);
- Krasnodar sauce (200 ml.);
- olives (150 g, pitted);
- dry seasonings (oregano, basil);
- black pepper and salt to taste;
- olive oil (cold pressed).
Prepare the filling for the rolls. To do this, cut the eggplant into cubes approximately 1x1 cm in size. Add salt, stir well and place in a sieve under pressure. The bending can be done using a plate and a jar filled with water, or you can use a heavy lid from a grill pan. The eggplants under the press will begin to release juice, so place a bowl under the sieve so that there is somewhere to drain excess liquid.
Wash the bell peppers, remove the core and stem. Cut lengthwise into several pieces. Pour vegetable oil, add salt and place on a baking sheet. Bake in a well-heated oven (200 degrees) until burnt spots form on the peel. Then place the pepper slices in a bag and close it tightly. Keep them in the bag for at least 15 minutes. This will steam them and make it much easier to remove the skin.
Wipe the dried eggplants with kitchen napkins and fry in a frying pan in hot oil. Finely chop the olives and capers. At the moment when the eggplants are almost fried and covered with a golden crust, pour Krasnodar sauce into them. Add olives, capers and spices. Simmer for 10 minutes over low heat, stirring regularly.
When the eggplants have cooled, spoon them onto the pepper slices, wrap them in a roll and secure with a toothpick. Ready.
Canapé "Ladybug"
This bright appetizer will perfectly decorate any banquet menu. Such canapés look especially good on children's party tables. However, adults will also enjoy their delicate taste and appearance, which creates a summer mood. Making miniature sandwiches on crackers is very convenient. They do not need to be given the required shape; the crackers do not crumble during operation. And you can choose cheese for this recipe with any fillings (mushrooms, ham, herbs, etc.).
Ingredients:
- cream cheese (250 gr.);
- parsley;
- olives (10 pcs.);
- vegetable oil (1 tbsp);
- cherry tomatoes (10 pcs.);
- crackers (can be salted, 20 pcs.).
Preparation:
Spread the cheese onto the crackers in an even layer. Place parsley leaves on top, it will serve as a clearing. If you add finely chopped dill to the cheese, this will enhance the “herb” effect. Cut the washed and dried cherries lengthwise into two parts. Use a sharp knife to make shallow cuts on each half. This will create the appearance of unopened wings.
Now place the tomatoes in the clearing. Finely chop a few olives. The smaller the pieces, the more graceful the ladybugs will be. Place three pieces on each “wing”. To ensure that the olive dots stick to the tomato, first grease the cherry tomatoes with vegetable oil. Cut “heads” from the remaining olives and attach them to the tomatoes. Canapes “Greek”
The appetizer recipe is taken from the classic Greek salad. The exquisite fresh taste of such canapés will perfectly complement the holiday menu, and if you add a light sauce to them, it will turn out simply divine. Ingredients:
- tomatoes (3 pcs.);
- Feta cheese (or feta cheese, 250 gr.);
- olives (100 g, pitted);
- medium-sized cucumbers (3 pcs.);

- greens to taste (dill, basil, parsley, green onions).
Preparation:
As with Greek salad, the vegetable pieces should not be too small. Therefore, cut the tomato and cucumber into cubes approximately 2x2 cm in size. Cut off the stalk of the pepper and remove the core with seeds. Cut into squares the same size as the cucumber and tomato.
Remove the feta from the packaging and place on a kitchen napkin. Leave for a couple of minutes to drain excess liquid. Pour the olives into a colander and let dry. Now assemble the canapés. Place pieces of vegetables on the skewer one at a time, finishing the design with a cube of cheese and an olive. Now start preparing the sauce.
The sauce is made from olive oil and lemon juice. Mix these two components, add salt and ground black pepper. Stir well and pour into a small bowl. The bowl can be placed in the dish itself on which you will serve the canapés. To prevent vegetables from becoming too saturated with marinade and losing their taste, do not water them in advance. It is better for each guest to dip the canapes into the sauce themselves, if necessary.
