There are a lot of reasons for holding a buffet. If you organize it together with colleagues for some holiday, that’s one thing, but for your birthday, that’s completely different. Here you have to rack your brains about how to surprise your colleagues and feed them well.

First, you should remember the rules for this event. A buffet is when there is not enough space to receive guests, so food is eaten while standing. This event is more suitable for friendly communication than for fun with dancing and competitions.

In this case, guests independently choose food and drinks from the common table. The menu for this event must be thought out so that everything on the table can be conveniently picked up with your hands or a fork.

The buffet usually lasts no more than 2 hours. It is important to time the number of snacks so that there is enough for everyone to eat. On average, 1 person has 400-500 g of various snacks and 0.5 liters of drinks. If alcohol can be served, then the calculation is made based on the preferences of the team.

Organizers are invited to host a large event, and you can organize a light feast yourself by preparing the dishes yourself.

Trend 3: Italian retro

The rustic style is still relevant, but has changed direction slightly. This fall, French Provence and cowboy simplicity in table decoration are being replaced by extremely warm and soulful Italian retro. Ingredients:

  • 100 g dried wheat bread
  • garlic clove, olive oil, dill
  • 200 g boiled chicken breast fillet

  • 150 g romaine lettuce

  • salt pepper

For the sauce

  • 2-3 tbsp. l. olive oil
  • 70 g mayonnaise
  • 70 g natural yoghurt
  • 5-7 capers
  • 10 g mustard
  • 10 g parmesan
  • 20 g anchovies

Preparation:

  1. Rub the bread with garlic and drizzle with olive oil. At home, fry in a dry, heated frying pan for a minute on each side.
  2. Sprinkle with finely chopped dill.
  3. Cut the chicken fillet into 1.5 x 1.5 cm cubes. Lettuce leaves into long strips. Grate the cheese.
  4. Whip the ingredients for the sauce in a blender.
  5. Thread tomato, lettuce, chicken fillet square, bread square, lettuce, chicken, tomato onto skewers. Place skewers on a plate and drizzle with dressing.

Cheese balls

Originally made cheese balls are very similar to candy. When you offer them to your colleagues, they will refuse because they haven’t gotten around to candy yet.

Preparation:

  1. In a bowl, mash the blue cheese with a fork, add soft goat cheese and cream cheese, mix until smooth.
  2. Grate hard cheese and place on a flat plate.
  3. With wet hands, take 1 tbsp. l. soft cheese mass, roll into a ball, make a hole with your finger, put a nut in it. Close the hole and roll into a tight ball.
  4. Roll the ball in grated cheese.

Salad with nuts

Prepare a light salad from a jar of red beans, finely chopped dill and walnuts. The number of ingredients is arbitrary. You can season with mayonnaise or olive oil.

Chop the nuts at home, and mix with beans and dill at work. The salad is ready!

This appetizer is prepared in a matter of minutes. Products for it can be purchased during lunch break.

Ingredients:

  • Hard cheese – 200 g
  • Lemon – 150 g
  • Marmalade – 100 g
  • Olives - 100 g

How to cook

  1. Cut the cheese into equal squares. Thread onto skewers.
  2. Cut the lemon into small pieces, squeeze lightly. Skewer on top of cheese.
  3. Place pieces of colored marmalade on top of the lemon.
  4. Olives complete the pyramid.

Birthday cake

Everyone loves pies, even those who are on a diet. To avoid fiddling with the dough, you can buy ready-made squares of frozen dough. For one square you will need 3 fresh apples, 3/4 cups of sugar, 30 g of butter.

How to bake:

  • Defrost the dough
  • Sprinkle the silicone mold with sugar.
  • Arrange the chopped apples, sprinkle with sugar again, and add another layer of apples.
  • Place pieces of butter on top.
  • Cover with defrosted dough, press the edges tightly, brush the top with sweet water for a beautiful crust.
  • Place in preheated oven for 35 minutes. Monitor cooking periodically.
  • Turn apples upside down.

Apple marshmallow

To make apple marshmallows you need:

  • apple jam - 250 g;
  • egg white - 1 pc.;
  • sugar - 400 g;
  • agar-agar - 4 tbsp. l.;
  • water - 150 g;
  • vanillin - on the tip of the knife.

Recipe:

  1. Pour cold water over agar-agar and leave for 1 hour.
  2. Pour this mixture into a saucepan and bring to a boil.
  3. Add vanillin, sugar, boil for 10 minutes.
  4. Add egg white to apple jam and beat with a mixer until foamy.
  5. Add the prepared syrup to it without turning off the mixer.
  6. Place the mixture in a piping bag and then use it to pipe out the marshmallows.
  7. Leave to harden for several hours.

Snacks from around the world

By preparing dishes from different countries, you can incredibly please your colleagues.

Stuffed bell peppers: cut each pepper into 2 parts, remove seeds. Cut boiled chicken meat, tomatoes, cucumbers, boiled eggs, season with mayonnaise, add pepper. The dish can be served to the table.

Ingredients:

  • Beans - 500 g
  • Onion - 2 pcs.
  • Cilantro
  • Garlic - 3-4 cloves
  • Salt, adjika, suneli hops, ground coriander

Preparation

  1. Soak the beans in cold water overnight.
  2. Coarsely chop the onion, add to the beans, cook with the lid closed until tender.
  3. Mash all this with a fork to a paste. Some beans can be left whole.
  4. Chop a bunch of cilantro, chop the garlic.
  5. Thinly slice the second onion into half rings.
  6. Stirring constantly, add adjika, coriander, hops-suneli, and add salt.
  7. Turn off the stove, add garlic, herbs, and onions. Let stand for 15 minutes.

You can make sandwiches or serve with meat.

  • Onion – 500 g
  • Starch – 5 g
  • Hot pepper – 10 g

  • mayonnaise - 200 g;
  • crab sticks - 100 grams;
  • starch - 2 tsp;
  • sunflower oil for frying.

Tartlets with tuna mousse

A quick and satisfying appetizer is indispensable for a buffet table.

Products:

  • 1 can of tuna in its own juice;

  1. Beat cream cheese, tuna and mayonnaise in a blender bowl.

If you collect the snack right in the office, then prepare the mousse at home and put it in a regular food-grade plastic bag. Then all you have to do is cut off the tip of the bag and figuratively put the mousse into the tartlets, and then decorate them with the prepared ingredients. Of course, you should store the bag of mousse in the refrigerator.
