Any holiday after an hour of feasting often easily and naturally turns into an ordinary drinking party. But to be able to keep guests in an elevated festive mood until the end of the “event” is probably only possible with the help of the ancient Chinese ritual of drinking wine.
This ancient ritual cannot be summarized briefly - in the East there are no trifles, and in detail it is tedious for the reader. And that’s not the point. The main thing is whether it is interesting or not.
I found this ritual very interesting, and decided to show it to you “on the fingers” - to model the celebration of my birthday in the style of the ancient Chinese wine drinking ritual.
But first, a little history.
A long time ago (1046−771 BC), during the period of one of the earliest dynasties of China - the Western Zhou dynasty, in this country they took and created a set of rules for wine etiquette, which was inherited by subsequent dynasties and became an important part of rituals of ancient China.
So important that during the reign of many dynasties, the position of “wine official” was even established - as evidence of the significant role of wine drinking customs and traditions in ancient Chinese society. His status was equal to that of today's minister. To the Minister of Education and Science, for example. However, no - the current minister would be listed as his “supervisor”.
In those ancient times, the “wine official” dealt with issues of distillation and organization of banquets, and supervised the implementation of wine etiquette. Since in those days, noble people and high-ranking officials drank wine together at important state events, the presence of a “wine official” was a certain guarantee of maintaining order during the banquet. Violators of wine etiquette were simply expelled from such events.
As is customary in China to deal with rules, a strict set of rules as a result of reform and continuous evolution over “some” two to three thousand years has turned into a unique, unique canon of wine drinking. With which I congratulate them, naturally, and inspired by the amazing custom, I most decisively intend to try to instill the culture of wine drinking in my guests using the example of ancient China. Chicken liver terrine

Ingredients:
- Chicken fillet - 250 gr.

Stuffed champignons

- pork neck - 4 kg;
- bacon with lard - 150 g;
- tomatoes - 4 pcs;

- prunes - 200 g;

Cook in the oven at 180 degrees for about 90 minutes. If you don’t have time to marinate the meat, you should cook it in foil for the first 20 minutes. Sprinkle the finished dish with herbs and serve hot.
Beetroot balls with sesame seeds

When it boils, leave for 5-7 minutes and then pour the broth into a separate bowl.
You will need 250 milliliters of broth.
Add gelatin to the broth and heat over low heat until completely dissolved.
Grind the fish using a meat grinder.
Cut the onion into small cubes.
Mix peas, fish, onions, carrots, sour cream with mayonnaise in a cup.
Grate the beets and block on a fine grater.
Add sour cream with mayonnaise and salt.
Divide the diluted gelatin jelly in half.
Pour 1 portion into the fish, and the other into the beets.
Mix well, whisking a little.
