  • 125 ml milk
  • 100 g butter
  • 4 eggs
  • 150 g flour
  • 1 tsp. Sahara
  • 0.5 tsp. salt
  • 1 egg and 1 tbsp. l. milk for lubrication

For cream and glaze:

  • 1 can of boiled condensed milk
  • 100 g sweet cream butter
  • 100 g mascarpone
  • 25 g powdered sugar with vanilla
  • whipping cream 35%

Step-by-step cooking recipe

1. Preheat the oven to 190°C. Combine the milk, 125ml water, butter, salt and sugar in a saucepan. Place on the fire and bring to a boil. Remove from heat, add all the flour at once and beat with a wooden spoon until you get a thick mass without any lumps of flour.

2. Place the pan on the heat again. While stirring, lightly dry the dough, 1 minute. Transfer the dough to a bowl. Add the eggs one at a time, beating vigorously with a wooden spoon. The resulting dough should be viscous, smooth and shiny.

3. Using a pastry bag with a star nozzle with a diameter of 1.5 cm, place sausages 6–10 cm long, 3 cm apart, onto a parchment-lined baking sheet, brush them with beaten egg and milk. Bake for 20-25 minutes until golden brown and crispy. Cool.

4. For the cream, beat the butter with the mascarpone until fluffy. Without stopping whisking, gradually add boiled condensed milk. Place the cream into a piping bag fitted with a pointed tip. Make a hole in the side of each eclair with a nozzle and fill with cream.

5. Having filled all the eclairs, prepare the glaze: mix enough cream with powdered sugar to form a thick, flowing mass (start with 1 tbsp, adding 0.5 tsp at a time). Drizzle the glaze over the eclairs and refrigerate for at least 2 hours.

For the sauce:

  • cherry – 160 g
  • sugar – 50 g
  • grated lemon zest – 1 tsp.
  • dry red wine – 125 ml

For the test:

  • butter – 50 g + a little more for preparing the mold
  • sugar – 65 g + a little more for preparing the mold
  • chocolate (at least 70% cocoa) – 200 g
  • vanilla extract – 2 tsp.
  • eggs – 5 pcs.
  • flour – 70 g
  • salt - on the tip of a knife

Step-by-step cooking recipe

1. Prepare a springform pan with a diameter of 20-22 for baking chocolate cherry pie. Grease it with butter and sprinkle with sugar. Preheat the oven to 170°C.

2. Break up the chocolate and place on low heat along with butter and 30 g of sugar. Stirring, heat until the mixture has a homogeneous consistency. Remove from heat, add vanilla extract and let cool.

3. Divide the eggs for the pie dough into whites and yolks. Place the egg whites in the refrigerator until ready to use. Add the yolks one at a time to the chocolate mixture, whisking at low speed. Add flour sifted with salt and mix.

4. Beat the whites with a mixer at high speed until soft peaks form. Gradually add the remaining sugar. Beat until stiff peaks form. The sugar should be completely dispersed in the protein mass.

5. Mix a third of the protein mixture into the chocolate mixture. Then, lightly whisking with a whisk or fork, add the remaining whites. Stir quickly. The chocolate pie dough is ready.

6. Pour the dough into the prepared pan and place in the oven for 35-40 minutes. The top of the finished cake should spring back slightly when pressed. Leave the cake in the pan for 10 minutes, then transfer to a wire rack and let cool completely.

7. Prepare the chocolate pie sauce. Place the cherries, sugar, lemon zest and wine in a small saucepan. Place on the fire and, stirring, bring to a boil. Cook over low heat for 10-15 minutes. Remove from heat and let cool completely.

8. Place the cooled chocolate pie on a large plate and top with cold cherry sauce. Serve immediately. You can decorate with mint or lemon balm leaves.
