It can be based on seafood or with the addition of ham. The sauce remains unchanged; it is what makes the salad truly authentic.

Ingredients:

  • chicken fillet – 200 gr.;
  • romaine lettuce – 200 gr.;
  • cherry tomatoes – 200 gr.;
  • white baguette – 150 gr.;
  • quail eggs – 6-8 pcs.;
  • chicken egg – 1 pc.;
  • Parmesan or other hard cheese – 70 gr.;
  • extra olive oil – 120 ml;
  • lemon juice – 2 tbsp;
  • mustard – 1 tsp;
  • anchovies – 1 pc.;
  • Worcestershire sauce – 1 tsp;
  • salt, pepper - to taste.

Cooking method

  1. Prepare chicken fillet in advance. Wash and marinate it an hour before cooking. You can use your favorite spices for the marinade, but suneli hops and paprika combined with salt and pepper are best. Fry a whole chicken fillet on both sides over high heat in olive oil, cover and cook over low heat for 10-15 minutes. Place the fillet on a paper towel and let the oil drain.
  2. For croutons, it is better to choose a fresh French loaf. After purchasing, wrap the loaf in a plastic bag and leave for several hours, so the loaf will not crumble when cutting, and you can make even cubes. Cut the loaf, place the cubes on a baking sheet, drizzle with olive oil. For flavor, you can squeeze a few cloves of garlic on top and season with your favorite herbs. The crackers only need to be lightly toasted so that the bread becomes crispy and imbued with the aroma of spices.
  3. For the sauce, boil the chicken egg for 2-3 minutes. Peel and place in a bowl. Add olive oil, lemon juice, mustard to the egg. Crush the anchovies and add to the sauce. Beat the contents with a blender or grind thoroughly with a fork. Season with salt and pepper to your taste and add Worcestershire sauce. It cannot be replaced with anything, so if you don’t have it on hand, it’s better not to experiment and make the sauce without it. Give a final stir and the dressing is ready.
  4. Boil quail eggs for 6 minutes. Add a tablespoon of salt to the water to prevent the shell from cracking during the cooking process. Cool, peel and cut in half.
  5. Cut the chicken fillet into thin pieces, no more than 5 millimeters thick.
  6. Wash the lettuce leaves and dry them on a towel. Rub a salad bowl with garlic, place lettuce leaves on the bowl, place chicken fillet and quail egg halves on top.
  7. Wash the tomatoes and cut them in half, place them on top of all the ingredients in the salad.
  8. Pour the sauce evenly over the salad. Place croutons on top and sprinkle with grated cheese. Do not stir.

The snack in the form of round balls, similar to Raffaello candies, has been known for a long time. However, this dish is great for a corporate party since it can be prepared in advance.

  4. The cakes are baked in an oven preheated to 180 degrees on top-bottom mode for 5-7 minutes. While the first two cakes are baking, form the next sheet of dough. The result will be 8-10 cakes.
  5. Cool the finished cakes separately, without stacking them on top of each other, otherwise they will stick together.
  6. Beat the cream with the vanilla sugar in a mixer at medium speed until you get a thick lump. Then gradually pour in cold condensed milk.
  7. Assemble the cake, sandwiching each layer with cream and refrigerate for several hours.
