Cauliflower meatballs “Canary style”


This simple recipe came to us from the Canary Islands.
It will appeal to both those who observe fasting and those who simply want to diversify the menu. Children will especially be attracted to this dish, but it is very difficult to feed them healthy vegetables. Sour cream or cheese sauce goes well with these diet balls, and they can also be used as a side dish for any meat. Cooking time: 35 minutes. Number of servings: 4.

Ingredients:

  • Cauliflower – 600 g.
  • Wheat flour – 130 g.
  • One large egg.
  • Dried thyme – 2 tsp.
  • Ground chili - 1 tsp.
  • Salt - to taste.
  • Refined sunflower oil – 250-300 ml.

Preparation:

1. Wash the cabbage, you can even let it soak in salt water. After this, cut into inflorescences and grind in a blender. If you don't have a blender, use a meat grinder.

2. Beat the egg into the chopped cabbage and add half a glass of flour.

3. Also don't forget to add spices and pepper. These seasonings will give you an immediate aroma as if you were dining right in the Canary Islands.

4. Mix the dough and form small balls.

5. Fry in oil until a nice even color is obtained. Then blot with a napkin to remove excess fat. Serve garnished with greens.

Appetizer “Shells” with red fish


The paradox of this snack is that it looks much more complicated than it actually is.
At first glance, it seems that this dish is worthy of restaurants, but preparing it in your own kitchen is quite difficult. But that's not true. This appetizer will decorate absolutely any table and will inevitably delight your family. And if you have fish and dough in your refrigerator, you can treat unexpected guests with such shells. Cooking time: 25 minutes. Number of servings: 6.

Ingredients:

  • Puff pastry (can be ice cream) – 200 g.
  • Salted red fish – 80 g.
  • Yolk of one egg.
  • Olives – 40-50 g.
  • Mayonnaise sauce – 2 tbsp. l.
  • Russian cheese – 40 g.
  • A few iceberg lettuce leaves.
  • Sesame – 2 tbsp. l.

Preparation:

1. Cut out small circles from the puff pastry. They need to be lightly greased with yolk and lightly sprinkled with sesame seeds.

2. After this, the dough should be placed on parchment and baked for about ten minutes.

3. Cut the future shells on one side and place a piece of lettuce and an olive inside.

4. Cheese should be of your favorite variety. We chose Russian because it is more common.

5. Lastly, you need to lay out the fish cut into pieces. Garnish with additional dill and place on the table.
